Murukulu Recipe: Crunchy South Indian Snack

Ingredients:

  • 2 cups rice flour
  • 1/4 cup urad dal (black gram dal), roasted and powdered
  • 1/4 cup butter, melted
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Water, as needed
  • Oil for deep frying

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, combine the rice flour, roasted urad dal powder, melted butter, cumin seeds, sesame seeds, asafoetida, and salt.
  2. Mixing:
    • Gradually add water and knead the mixture into a smooth, pliable dough. The consistency should be firm enough to hold its shape.
  3. Shape the Murukulu:
    • Heat oil in a deep frying pan over medium heat.
    • Take a portion of the dough and place it in a murukku press or chakli maker.
    • Press the dough in a circular motion directly into the hot oil, forming a spiral or circular shape. Make sure not to overcrowd the pan.
  4. Fry Until Golden Brown:
    • Fry the murukulu until they turn golden brown and become crispy. Ensure even frying by flipping them occasionally.
  5. Drain and Cool:
    • Once done, use a slotted spoon to remove the murukulu from the oil and place them on absorbent paper to drain excess oil.
  6. Repeat the Process:
    • Repeat the process with the remaining dough, adjusting the flame as needed to maintain the oil temperature.
  7. Cool Completely:
    • Allow the murukulu to cool completely before storing them in an airtight container.
