Kandagadda Fry Recipe: Spicy Elephant Foot Yam Stir-Fry
Ingredients:
- 1 medium-sized elephant foot yam (kandagadda), peeled and cut into small cubes
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to spice preference)
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Curry leaves
- Fresh coriander leaves, chopped (for garnish)
- Salt to taste
- Cooking oil
Instructions:
- Prepare the Elephant Foot Yam:
- Peel the elephant foot yam and cut it into small, bite-sized cubes. Rinse the cubes thoroughly to remove any dirt.
- Parboil the Yam:
- In a pot of boiling water, add the yam cubes and cook for about 5-7 minutes until they are partially cooked. Drain the water and set aside.
- Heat Oil:
- In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
- Add Aromatics:
- Add asafoetida, curry leaves, and green chilies. Sauté for a minute until the flavors are infused into the oil.
- Add Onions and Ginger-Garlic Paste:
- Add chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and cook for an additional 1-2 minutes until the raw smell disappears.
- Add Tomatoes and Spices:
- Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and cumin powder. Cook until the tomatoes are soft and the oil starts to separate.
- Add Parboiled Yam:
- Add the partially cooked yam cubes to the pan. Stir well to coat the yam with the masala mixture.
- Stir-Fry:
- Stir-fry the yam on medium heat until it is cooked through and gets a golden brown color. Ensure that the yam is cooked but still retains a slight firmness.
- Check for Seasoning:
- Adjust salt and spice levels according to your taste preferences.
- Garnish and Serve:
- Garnish the kandagadda fry with fresh coriander leaves. Serve hot as a side dish with rice or Indian bread.
