Kandagadda Fry Recipe: Spicy Elephant Foot Yam Stir-Fry

Ingredients:

  • 1 medium-sized elephant foot yam (kandagadda), peeled and cut into small cubes
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to spice preference)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Curry leaves
  • Fresh coriander leaves, chopped (for garnish)
  • Salt to taste
  • Cooking oil

Instructions:

  1. Prepare the Elephant Foot Yam:
    • Peel the elephant foot yam and cut it into small, bite-sized cubes. Rinse the cubes thoroughly to remove any dirt.
  2. Parboil the Yam:
    • In a pot of boiling water, add the yam cubes and cook for about 5-7 minutes until they are partially cooked. Drain the water and set aside.
  3. Heat Oil:
    • In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
  4. Add Aromatics:
    • Add asafoetida, curry leaves, and green chilies. Sauté for a minute until the flavors are infused into the oil.
  5. Add Onions and Ginger-Garlic Paste:
    • Add chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and cook for an additional 1-2 minutes until the raw smell disappears.
  6. Add Tomatoes and Spices:
    • Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and cumin powder. Cook until the tomatoes are soft and the oil starts to separate.
  7. Add Parboiled Yam:
    • Add the partially cooked yam cubes to the pan. Stir well to coat the yam with the masala mixture.
  8. Stir-Fry:
    • Stir-fry the yam on medium heat until it is cooked through and gets a golden brown color. Ensure that the yam is cooked but still retains a slight firmness.
  9. Check for Seasoning:
    • Adjust salt and spice levels according to your taste preferences.
  10. Garnish and Serve:
    • Garnish the kandagadda fry with fresh coriander leaves. Serve hot as a side dish with rice or Indian bread.
